Papaya is one of the most delicious and healthiest fruit on Earth. Papaya has a unique ability to soothe the stomach. Every time I have acid reflux problems I eat papaya and it helps me to keep the symptoms under control. Papaya is full of vitamins, minerals, and other helpful stuff. This includes carotenes, vitamin C, the B vitamins, folate, pantothenic acid, potassium, copper, magnesium, and fiber.
Papayas are picked when they are green in order to reduce bruising during shipping. However, the papaya is not ready to eat until it is predominantly yellow. Here is a little tip: papaya fruit can ripen more quickly if you put it in a paper bag with ethylene producing fruit such as an apple or a banana.
To eat papaya you should cut the fruit in halves horizontally and scoop the seeds out with a spoon.

I call these creations Hawaiian Papaya Boats because I learned the recipe in Hawaii and the shape of the papayas remind me of boats. Here is the recipe:
– Cut one papaya in half
– Scoop out the seeds from each half
– Fill in the space vacated by the seeds with yogurt and granola
– Optionally, you can add honey
